Another healthy bean salad – this time with a bit more pepper and stronger citrus flavours for when you fancy it.
- Tin each of: Chickpeas, Butter Beans and Haricot Beans
- 1 Red Onion
- 3 Mixed Peppers (Red, Green, Orange)
- 1 Garlic Clove crushed
- 1 tbsp Parsley, finely chopped
- 25ml Olives Et Al Lemon and Dill dressing
- Juice of 1/2 Lemon
- Olives Et Al Extra Virgin Olive Oil
Drain, rinse, peal or prepare your chosen beans as required, then put altogether into a large bowl. Chop the onions and peppers to similar size chunks and sweat them together in a little olive oil until soft. Add the crushed garlic and stir well.
Tip the beans, onions and peppers all into one large bowl and stir to mix thoroughly. Squeeze the lemon over the mix, drizzle with Lemon and Dill dressing, stir and top with freshly chopped parsley and serve.
Can be eaten warm or cold.
