Healthy, nutritious and simple bean salad with a robust flavour – workday packed lunch or as an accompaniment to a main dish.
Ingredients (serves 4 – 6)
- Tin each of: Cannellini, Black, Soya and Kidney beans (Or any mix of beans that take your fancy)
- 2 Tbsp Olives Et Al Chilli Billy Jelly
- 1 Large Onion
- 2 Red Peppers
- 2 Cloves Garlic crushed
- 1 Bulb Fennel
- Fresh Red or Green Chilli sliced
- Fresh Parsley finely chopped
- Olives Et Al Extra Virgin Olive Oil
Drain, rinse, peal or prepare your chosen beans as required, then put altogether into large bowl. Chop the onions, peppers and fennel to similar size chunks and sweat them together in a little Olive Oil until soft. Add the crushed garlic and stir well.
Add 2 generous spoonful’s of Chilli Billy Jelly into the warm veg and stir until mixed in. Tip the veg mix into the bowl with the beans and stir to mix thoroughly, top with freshly chopped chilli and parsley and serve.
Can be eaten warm or cold. Perfect with our Warm Mojo Chicken Salad or just on a bed of fresh leaves.
