A full flavoured warm potato salad with a good oniony bite and a decent tang.
- 500g New or Small Potatoes
- 50ml Olives Et Al Orange & Shallot Dressing
- 1 Garlic Clove
- 2-3 Spring Onions sliced
- Salt and Pepper to taste
Wash and scrub the potatoes without peeling. Put them into a pan of salted water and bring to boil. Simmer gently for 20 minutes or so until tender but firm. Remove, drain and fill pan with cold water to prevent further cooking. Set aside.
While the potatoes are doing crush the garlic and mix with the orange and shallot dressing and spring onions in a small bowl. Stir until well combined.
Once cool enough to handle, drain the potatoes and roughly chop into bite size chunks. In a large bowl, combine everything, stir well, season to taste and serve whilst still just warm.
