A recent invention in the deli and one which has proved to be a bit of a hit with the folk around here. Again, full of our trademark robust flavours - very quick and simple to make.
Ingredients (serves 4)
- 100g Couscous
- 3 Spring Onions
- 150g Fresh or Frozen Peas
- 1 Fennel Bulb
- 100g OEA Tomorosso
- 125g Feta
- 1 Tbsp Sultanas
- 1 Tbsp Pine Nuts
- Olives Et Al Raspberry and Mint dressing
- Salt and Pepper
Cook the couscous in 100 ml of boiling water, turn off heat and leave to stand until all moisture has been absorbed. Easiest way is simply boil the kettle, pour the water onto the couscous and leave it to stand while you do everything else. Not traditional, but it works...
While the couscous is doing its thing, pour some more boiling water onto the peas and refresh; trim and finely slice the spring onions, the fennel, the tomorosso and crumble the feta. Mix together with the sultanas and pine nuts then add the prepared couscous. Stir well, season to taste and glug over some Raspberry & Mint dressing. Serve. This is good with a tagine or slow roast something or other as well.
