Putney Sauce
Chop up potatoes into nice chunky wedges and par-boil for no more than 10 minutes.
Cover with oil and coat the wedges with lots of Dukkah.
Bung them in a hot oven for around 25 minutes until nice and crispy.
These are fantastic served with Putney Sauce.
For an aperitif, get some bready chunks, dip in olive oil, and then coat in the Dukkah.
